Beef Ribs with Jonno’s Worcestershire Sauce

Author: Jonno Alcaro

Serves: 2-3

Cuisine: American

Prep time: 15 min

Cook time: 110 min

Ingredients

1 rack of meaty beef ribs (3-4 lbs), cut into 2 even pcs

Water

Salt

Jonno’s Worcestershire Sauce

Instructions

    1. In a large pot, boil three inches of water and blanch each rack one at a time for 5 minutes on each side. This will seal the juices in the meat and prevent flair-ups.
    1. Remove the racks from the water and set them on a tray or in a pan. Dry the meat side and sprinkle generously with coarse salt to taste.
    1. Heat the grill to Medium Warm (300-325⁰). Grill ribs for 30 minutes with the bone side down, 9 minutes with the meat side down and another 30 minutes with the bone side down.
    1. Remove from the fire and allow to cool for 10-15 minutes. Slice the ribs.
    1. Serve with Jonno’s Worcestershire Sauce on the side.

Notes

I started putting just salt on my ribs before cooking them because I give the bones to my dogs after they are devoured and their stomachs just don’t get along with traditional sauces. Then I realized how good the meat truly is on Costco’s beef ribs and I am just fine with just salt and Jonno’s Worcestershire Sauce as a dipping sauce.
