  • 1 rack of meaty beef ribs (34 lbs), cut into 2 even portions
  • Water
  • Salt
  • Jonno’s Worcestershire Sauce


  1. In a large pot, bring three inches of water to a boil. Blanch each portion one at a time for 5 minutes on each side to seal in juices and prevent flare-ups.
  2. Remove the two portions from the water and set them on a tray or in a pan. Dry the meat side and sprinkle generously with coarse salt to taste.
  3. Heat the grill to Medium Warm (300-325⁰). Grill ribs bone side down for 30 minutes, then flip to meat side down for 9 minutes, and then bone side down again for another 30 minutes.
  4. Remove from the grill and let cool for 10-15 minutes. Slice the ribs.
  5. Serve with Jonno’s Worcestershire Sauce on the side.


I began using only salt on my ribs because I feed the bones to my dogs and they can’t handle regular sauces. I found that Costco’s beef ribs taste great with just salt, and I like using Jonno’s Worcestershire Sauce for dipping.
