Caesar Salad Dressing with Jonno’s Worcestershire

Ingredients

  • 2 cloves garlic
  • 3 anchovy fillets
  • 1 ½ T Jonno’s Worcestershire
  • 1 ½ Dijon mustard
  • 1 egg and 2 yolks
  • 3 T lemon juice
  • 1 T red wine vinegar
  • Dash of tabasco
  • Salt and pepper to taste
  • 1 ½ cups extra virgin olive oil
  • Parmesan cheese
  • Anchovy fillets (optional)
  • Croutons (optional)

Instructions

  1. Combine eggs and garlic in a food processor until thickened.
  2. Add mustard,anchovies, lemon juice, vinegar, Worcestershire, tabasco and pepper.
  3. If possible, slowly pour or add the olive oil and process until consistency is smooth, creamy but pourable.

Notes

  1. Toss cut up Romaine lettuce with dressing until it is creamy.
  2. Sprinkle parmesancheese and toss until well mixed.
  3. Add salt and pepper to taste.
  4. Top withanchovy fillets and/or croutons if desired.
